When it comes to cocktail hours, be sure to have plenty of displayed foods (crudite and cheese and crackers, etc.) and some "butlered" (passed) foods so that guests have plenty to eat. (The problem with too many butlered foods is that guests who are the closest to the kitchen doors are the ones who get the most to eat. :-)
